The Fabulous Life

What I’ve wanted from life has changed over the years.

I used to want a successful (read – lucrative) career.

I wanted travel with nice hotels and good bottles of wine at dinner.

I couldn’t possibly go more than 8 weeks without a hair appointment, and I certainly didn’t have time to trim and polish my own nails.

Luckily I worked for automotive manufacturers, because I liked new cars… often.

I loved my shoes, and bought new ones at least once a month.

I wanted David Yurman jewelry for Christmas, and was even contemplating a Rolex because I worked hard and deserved nice things gosh-darnit.

My friends and I used to meet at cool bars for cocktails and girl talk.

I went on girl’s trips to Santa Monica, Cozumel and Aruba.

I used to look at my friends that did have kids and think… Wow, they have changed so much, but they seem SO happy.

Here I am at 36 (a month from being 37, ugh), and what I want now has changed a bit.

I want 5am wake up calls from my daughter.

I want baby toys strewn about my house.

I want meals eaten with one hand, usually in the form of a pb&j (and I don’t mean pear, brie & jamon)…Sorry, little Modern Family reference there.

I want an entire pot of coffee in the morning to ensure I can exist until dinnertime.

I want bibs and onsies in my laundry.

I want vacations at Disney, or maybe a beach house where I can cook dinner at night rather than having to schlep our stuff to a restaurant. A place where we can laugh when our baby farts a little too loud while we’re eating.

And for my birthday, I don’t want a Rolex, I wanted an iPhone so I could take better photos of my baby girl when we’re on the go. And I love it by the way…

My roots are 3 inches long and I’m so past due for a haircut that I pretty much have 2 options – headband or ponytail.

My nails are naked, no polish in sight. But I did file them yesterday!

I haven’t bought a pair of shoes since the flip-flops I had to buy for my pregnant, swollen feet…and I still wear them every day.

Instead of nice bars downtown, my girlfriends want to come to my house so they can hold my new baby girl. (Although cocktails are certainly not out of question…)

Ahhh, the fabulous life (filled with spit up covered tshirts, tears shed at 3am as I beg my daughter to tell me why she’s crying so I can fix it, and emergency phone calls to my girlfriends to ask “Is this normal?”)…

Yep, I’ve changed a lot, but I am so very happy. (Tired! But happy…)

Carmelized Onion Pizza

Ahhhhh… the power of goat cheese.

Is there anything better than a homemade pizza? I say YES! Homemade pizza with goat cheese. Something magic happens when heat hits this cheese, it transforms into something decadent and special.

I originally put these ingredients together as an appetizer pizza, but I have to admit that I ate it for my dinner and it was delicious.

My review of the crust – It was SO easy to pull together, took no time at all. It did rise, it rolled out easily, it looked really pretty, and it cooked through as expected. It was more of a crackery type crust, as opposed to a bready crust.

I cook with stoneware, which is well seasoned. So once I’ve rolled the pizza dough out as thin as I can get it, I toss a bit off cornmeal on the stone to keep the dough from sticking.

If you are cooking with a metal pan, you may want to use cooking spray instead.

If you haven’t ever carmelized onions before, be not afraid. It’s so so simple.

Slice up a whole onion in thin slices.

This photo makes me think of a movie quote: “You’re eating worms Michael.”

Did you get the movie? A few of my other favorites from the same movie, “Death by stereo!” “Burn rubber does NOT mean warp speed!!!” “One thing about living in Santa Carla I never could stomach…all the da*n vampires.”

In a large skillet over medium-low heat, place a tablespoon of olive oil along with onions. Add a bit of salt and pepper. Cook 10 minutes. 

Since I mentioned salt and pepper, I thought I would share a photo of my storage vessels for these ingredients. Do you see a problem? I think I need to invest in a nice grinder, or perhaps a better cellar for pepper I grind in bulk.

Back to the recipe – Add in 2 tablespoons of balsamic vinegar and continue to cook for 10 more minutes.

Voila, carmelized onions!

After you roll the pizza dough as thin as you can get it, you’ll need a “sauce”. I decided that those sweet carmelized onions would pair well with fig jam.

I just so happened to have delicious, homemade fig jam in my cupboard. If you don’t, then I am very sorry for you. You’ll have to settle for store-bought. But I would like to encourage you to get a dear friend who happens to be a fantastic cook. And make sure she has a fig bush in her back yard. A bush the size of her house, so that she’ll have figs coming out of her ears. This will ensure that you get fresh figs every summer, as well as a batch of jam that will last you through the year. And make sure she’s a sweet person who is willing to do all that work, just to share the fruits of her labor with friends. And if you don’t have a friend like Colleen, then again, I’m very sorry… I’d share her with you if I could. She’s a fantastic friend, and not only because of her delicious fig jam.

Spread a thin layer of the jam, leaving a 1″ crust. Cover the jam with the onions.

Then if you have rosemary growing gangbusters and need to find a way to use it, chop it up and toss it on top of the onions.

Cook the pizza in a preheated 475 degree oven on the lowest shelf for 15-17 minutes.

And the goat cheese. Ahhhhh, my dear friend goat cheese.

When the pizza comes out of the oven, we’ll just crumble half of this over the top. The heat from the pizza will do miraculous things to this cheese. Mmmmmm.

I hope you love it. I ate every bite last night.

Printable Version: Carmelized Onion Pizza

To make the crust (per www.ThePioneerWoman.com):

1/2 teaspoon Active Dry Yeast

3/4 cups Warm Water

2 cups All-purpose Flour

1/2 teaspoon Kosher Salt

3 Tablespoons Olive Oil

Sprinkle yeast over 3/4 cups warm (not lukewarm) water. Let stand for a few minutes.

In a mixer, combine flour and salt. With the mixer running on low-speed (with paddle attachment), drizzle in olive oil until combined with flour. Next, pour in yeast/water mixture and mix until just combined, and the dough comes together in a sticky mass.

Coat a separate mixing bowl with a light drizzle of olive oil, and form the dough into a ball. Toss to coat dough in olive oil, then cover the bowl tightly with plastic wrap and set it aside for 1 to 2 hours, or store in the fridge until you need it.

Laundry and Vodka’s Carmelized Onion Pizza:

1 onion, sliced thin

1 tablespoon olive oil

2 tablespoons balsamic vinegar

salt & pepper to taste

4 tablespoons Fig jam

1 tablespoon rosemary, chopped

1.5 oz goat cheese

 

Directions:

Preheat oven to 475 degrees.

Over medium-low heat, add olive oil, onions, along with salt and pepper. Cook 10 minutes.

Add vinegar to onions, cook 10 additional minutes.

Roll dough out as thin as possible. If using stone, dust stone with corn meal to prevent sticking. If cooking with metal pan, coat with cooking spray.

Spread fig jam across crust, leaving 1″ crust.

Top jam with cooked onions.

Dust chopped rosemary across onions.

Bake on lowest rack for 15-17 minutes.

While pizza is still hot, crumble goat cheese over top.

The First Baby

There’s something that you should know about me… in case you haven’t figured it out yet… I had a baby BEFORE I actually had a baby.

Nigel the weenie dog is the original baby in this house. He’s our princess.

I promised him that no matter what, he would not be demoted to “dog status”.

This blurry beast however, is, always was, and always will be a DOG. He can’t sit still for photos, he jumps at every sound that is slightly out-of-place, he barks far too much for my liking, and he’d knock anyone out of his way for a treat.

He’s a D-O-G.

But this is my baby. He sleeps with me at night. He licks my feet even when I beg him not to. He devours his food in 3.2 seconds. He barks every time the baby cries, which intensifies my stress in the moment. He lets me hold him up and use him as a puppet when I’m trying to make my husband laugh. Nigel gets away with murder because he has wrinkly legs and he’s blind. I think he has actually gained MORE weight lately, probably because I feel guilty for spending less time cuddling with him so I fill the void with yummies. (And yes, I know this is bad for him). He prefers to be on furniture rather than the floor. And he lets us know when we haven’t paid him enough attention by pottying somewhere in the house that you’ll only find by stepping in it with socked feet…

But there’s just something special about the first baby isn’t there?

Time Flies

It’s amazing how quickly time goes by when you have a newborn at home…

I’ll think it is almost time for lunch and it’s already 5pm. It will dawn on me that I put clothes in the wash at 7am, but I don’t realize it until 4am the next day when Drew and I wake for her bottle.

And I keep thinking of funny things to post about, or interesting recipes I’d like to make and photograph…but somehow I can’t find the time. And there have been several hilarious photos I could have taken, but my hands are always full of baby.

And on most days my lap is full of baby girls and baby weenie dogs… That’s just how we roll around here.

But I did manage to snap this adorable photo right after bath time. Aint she a doll?

How Do I Say Thank You?

Before we talk about thanks, let’s talk chow.

I made The Pioneer Woman’s self-professed best cinnamon roll recipe ever. I wanted to take a little thank you gift to all of the nurses at our local hospital that had a hand in bringing our new daughter into the world, and I thought if there was anyone’s recipe out there that I could trust it would be PW. If she says they’re fantastic, then they must be.

And lemme tell ya… They are FANTASTIC! The icing is so good I could eat it by the spoonful. So I totally recommend checking out this recipe for your future Thank you, Happy Holidays, Happy Birthday… gifts.

You all know our story by now, but for any newbies – my daughter was born a month early. Being a preemie wasn’t that much of a challenge for us, the problem was that we suffered a rare condition called maternal-fetal reverse blood transfer. The long and short of it, my body was taking the blood intended for my baby, and she was born with a huge shortage of blood. She was saved by the knowledge and devotion of our doctors and nurses. I would say that’s definitely something to say thank you for!!!

But I really struggled with the appropriate way to say thanks. Liquor and food are always big hits, so that’s what I gave the doctors and nurses. But as I wrote the thank you notes, my hands trembled. The words to express my gratitude seemed so insignificant in comparison to the gift I had been given.

Thank you for saving my daughter’s life.

There… that’s what I’m thanking them for, so what else do I need to say?

Thank you for putting all else aside, to include your pride, to allow your patient’s voice to be heard rather than relying on science to dictate our next steps. This simple act saved my daughter’s life.

Thank you for caring so much for a stranger’s child that you would put your career at risk to take this child early based on a hunch you had based on your year’s of experience. This act saved my daughter’s life.

Thank you for being so practiced at your craft that your actions were swift and instant, resulting in not only saving my daughter’s life, but seemingly keeping her unscathed.

Thank you for loving a stranger’s child as though she were your own.

As we gave our perinatal specialist his preferred bottle of scotch (which we learned from the nurses), I thanked him in person for saving Drew. His response touched me so much in the moment, but it was later that it really sank in and will guide me as I learn to parent my child…

He simply said, “All I ask is that you love her and raise her right, that’s all the thanks I could ever ask for…”

The Outtakes

I’m baaaaaack!!!

I’m not the most technologically savvy blogger you’ll ever meet. As a matter of fact, I’m pretty much not savvy at all. I somehow turned off my firewalls on the pc, contracted a bad virus, and killed my computer. My sweet husband got a new motherboard for the computer, had it installed, and left me with the basic  business of getting my programs up and running.

For someone else – an hour-long job. For Alex – 3 days, 5 pots of coffee, lots of bad words, phone calls and facebook pleas for help, and a few shrugs of the shoulder that signify a willingness to accept the mediocrity of my computer capabilities. Alas, I’m up and running again. Yay!

Meanwhile, my daughter celebrated her 1-month birthday today. So while I haven’t been blogging much without a working computer, I have been taking A LOT of photos.

The one above is of her wearing one of my favorite outfits from my aunt and uncle. She was hanging out in her little play yard that is filled with bright colors and noise makers, but all she was interested with was the huge pacifier we were trying out.

Drew has really woken up this week. She is so much more active and playful.

The photos I’ve taken aren’t perfect, but a few of them really capture who she is right now. They illustrate the joy she has brought into our lives. A photo is worth a 1,000 words, and a million dollars, and tears, and laughs….

And while there are some pictures that I absolutely love and am so proud of, there are of course the outtakes. So, I thought you might need a laugh (at my daughter’s expense)… Hopefully she’ll forgive me when these surface during her Presidential campaign.

Yep, that’s MY girl…

Even the most beautiful of babies has a bad moment. It’ll keep her modest to know that this photo is out there. Right?

And if you have issues with a double-chin, I beg you… please don’t wear a pink toboggan with a bow the size of your head. It will NOT distract viewers from your chin(s).

‘Puter Issues

A virus attacked my pc. Sadly, I lost lots of photos which is sad. But I had many backed up., which is good.

Typing on my iPad is difficult! I find it difficult to be funny one letter at a time. But I wanted to let everyone know that baby girl and I are doing fine. She was smiling a lot today, which was justvso good for my soul.

Just a couple days until I will get my computer back. And I will try to be much more fun!

Shhh, the love/hate relationship with my pc…
